Join honey sommelier Helen Rogers for this informative workshop, where participants will take a deep dive into the world of honey.
What you will explore:
- The Journey of Honey: How bees create it, how beekeepers carefully harvest the "liquid gold," and why humans have been obsessed with it throughout history and religious texts.
- A World of Variety: Why honey characteristics vary so significantly from place to place.
- The Sensory Experience: You will taste five distinct UK mono-floral honeys. Session leader Helen Rogers will guide the participants through the same sensory analysis techniques used by professional honey sommeliers to truly "profile" each variety.
During the session, each participant will use:
- 5 hand-selected honey samples.
- Folders containing tasting sheets, an aroma wheel, and pens.
- Green apples and crackers to cleanse the palate between honeys.
The Honey Guild of the United Kingdom exists to evaluate the honey varieties made in the UK and to educate people in the sensory analysis of honey. The Guild is the National organisation for Honey Sensory Analysis in the UK, and maintains the UK National Register of Experts in the Sensory Analysis of Honey. The Guild’s aims are: -Educate in Honey Sensory Analysis -Define UK Honey Varieties -Promote Honey as a Fine Food The Honey Guild is a not-for-profit organisation.
Helen Rogers is based in London and is a Structural Engineer, specialising in cantilever stone stairs. She owns Highgate Honey, a beekeeping business with hives all around North London and has kept bees since 2012. She runs the training apiary for North London Beekeepers and runs regular honey tasting workshops. After experiencing the incredible range of honey that her hives produced, she began her Honey Sensory Analysis training in Bologna in 2019. She is a Member of the prestigious Italian National Register of Experts in the Sensory Analysis of Honey. She is a judge for Great Taste Awards and The London International Honey Awards. Helen is the author of 80 Flowers for Bees, serves as a director for Beecraft Magazine and is an Associate of The Academy of Cheese.
